- 3/4 cup Frigo® Ricotta Cheese
- 1 cup Frigo® Shredded Parmesan Cheese, plus 2 tablespoons
- 1 scallion, thinly sliced (white and green)
- 1 teaspoon garlic
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1 16-ounce package pizza dough*
- 4 ounces sliced deli ham
- 1/2 cup chopped artichoke hearts
- 1/2 teaspoon olive oil
Preheat the oven to 400oF.
In a small bowl, combine the Frigo® Ricotta Cheese, 1 cup of the Frigo® Shredded Parmesan Cheese, scallions, garlic, salt and pepper. Mix well and set aside.
Roll out the dough into a large rectangle, 10" x 15," and place it on a parchment-lined baking sheet. Spread half of the dough with the ricotta mixture, leaving a 1" border on each end. Then, top the mixture evenly with ham slices and cover with artichokes. Roll the dough slowly to enclose the fillings in a tight 15"-long log. Pinch the seam and ends to seal.
Bake for 15 minutes, then brush with oil and sprinkle with the remaining 2 tablespoons of the Frigo® Shredded Parmesan Cheese.
Bake for 10–15 minutes more, or until brown. Then, let it sit for 5 minutes. Slice and serve hot.
*Purchase prepared pizza dough in the refrigerated section, defrost frozen yeast dough or make your own!
