Mozzarella BLT With Pesto

  • 6 French sandwich rolls
  • 12 slices cooked smoked bacon
  • 2 ounces store-bought pesto
  • 2 ounces mayonnaise
  • 6 romaine lettuce leaves
  • 3 roma tomatoes, thinly sliced
  • 6 thick slices Frigo® Fresh Mozzarella Cheese
  • Freshly ground black pepper
  • Kosher salt


Slice the sandwich rolls open. Place the rolls, cut-side down on a griddle to toast, if desired.

Combine the pesto with the mayonnaise in a small bowl and smear one dollop on the bottom part of each roll. Spread with the back of a spoon.

Layer the romaine on the bread, then the tomato, bacon and Frigo® Fresh Mozzarella Cheese.

Season with salt and pepper; close the sandwich.
