BBQ Pork Mozzarella Melt

  • 8 thick slices English muffin bread or sourdough bread
  • 8 tablespoons butter, softened
  • 1 (16-ounce) Frigo® Fresh Mozzarella Cheese, cut into 1/4-inch thick slices
  • 2 cups pulled BBQ pork
  • 1 small red onion, thinly sliced thin, optional
  • 4 leaves of lettuce, optional
  • 1 cup BBQ Sauce
  • 4 sweet gherkin pickles, optional
  • Cole slaw, optional

Directions

Preheat the broiler in the oven. If your oven has broiler options, set it to low.

 Butter both sides of each bread slice. Place the slices on a sheet tray and cook them for 5 minutes or until the bread is browned on one side.

Flip all the slices of bread and top 4 slices with a slice (or two) of Frigo® Fresh Mozzarella Cheese. Then, top the other 4 slices with ½ cup of BBQ pork and a slice of Frigo® Fresh Mozzarella Cheese.

Allow the slices to bake for 5–7 minutes or until the cheese has melted and the BBQ pork is warmed through.

Then, make the sandwiches by layering the BBQ pork–topped bread with a few slices of red onion, lettuce, and BBQ sauce, as desired. Finish by placing the bubbly, melty Frigo® Fresh Mozzarella Cheese–topped pieces of bread on the pieces with the toppings and hold them shut with sweet gherkin spiked skewers.

Serve hot with coleslaw and more BBQ sauce for dipping!
